I've gone back to my Graph Theory text, and it appears that the Handshake Lemma is the one which gives the actual number of edges in terms of vertices. The fact that there is an even number of odd vertices is given as a corollary. --Matt Westwood 21:32, 2 November 2009 (UTC)
