Let $I$ be a real interval.
A subinterval $J$ of $I$ is a real interval such that $J \subseteq I$.
This page needs proofreading. In particular: A purely intuitive definition which may or may not be accurate -- for example, is $\openint a b$ strictly speaking a subinterval of $\closedint a b$ Why do you think this is not accurate? Because I don't know whether it is or not. It's not sourced, it's come out of an intuitive guess as to what a "subinterval" of a real interval would be. And how general does it need to be? Pardon my caution over posting up unsourced content.
