Definition
The process of evaluating roots of a given real number is referred to as extraction.

Extracting the cube root of $27$ is the process of finding its cube root, which (in the field of real numbers) is $3$.
Also known as
The operation of extracting a root of a number is also seen in some sources referred to as evolution.
By a similar naming convention, raising a number to a power is seen the same sources referred to as involution.
